The chicken was absolutely wonderful and the stuff was amazing. Green beans for the side dish.
Wonderful dinner. I'll be taking the bones and boiling them down to make stock for soup or another stuffing dish. This was so good.  Mary's free range chicken is the best!

Lazy day

Well today is a lazy day for me. I have the laundry going at least. Joe and I went out to our friends house this morning to help her sell an out building she has. Poor lady has to start downsizing because her husband is in assisted living now due to a stroke and she just can't take care of the property alone.  It's a great little place about 3 acres with nice double wide manufactured home on it, huge home , small green house and double garage one it. Very nice garden plot with fruit trees all over the property. I wish it were mine. I picked these out of the dahlia garden.




I have this feeling of wanting to do something, but I can't seem to decide what I want. Multiple things I would like to make, but not all the right ingredients. I made a small bottle of body wash last night. I really like it. I'll definitely make more of it, maybe even do that tomorrow.

Tonight dinner will be roasted chicken with stuffing and probably green beans.

I am very happy to report that it has been 1 month since I had my last diet coke.  Three weeks headache free. YAY!  The only problem with out having soda is what am I going to mix with the rum. HEHEHEHEHE

I think I will be adding a case of jars to my shopping list each payday, so when the time comes for canning I have them. I am also finding many other uses for them as I do my research.

I would really like to start taking some classes on herbs. I found this website https://www.holisticartsinstitute.com/ and think it would be wonderful to be able to do. It would be a good move for me. I have been interested in it for years and would really like to learn more.

Well today is my day off from work and I'm feeling unproductive. I need to do something, but I don't know what to do or where to start. I did manage to get my bathroom scrubbed down. I was totally embarrassed last night to come with company visiting and using our bathroom , that has gotten neglected for a bit. I spent my weekend baking instead of cleaning though. Imagine that.! Lately I'm finding baking bread and other things is quite fun and fulling. Makes me feel productive.  Considering cookies today I think.

The freezer didn't work out. It isn't going to be fixable. Really bummed about that.  Freezer is on the list of things to get in the future.

Sunday night we had tacos for dinner. I made the tortillas from scratch. Not so sure that I liked them. They were a bit on the heavy side and to thick. I used whole wheat white unbleached flour. That alone gave them a different texture than our favorite Mission tortillas. Olive oil instead of shortening or lard, so they were healthy, but different. The seasoning was recipe I found online that is just wonderful! I added some chopped onions and peppers also.Topped with organic sour cream and tillamook chedder cheese.  It was all good, but the tortillas will take work.

Monday night was Hamburgers. Nothing special. We used the home made buns I made on Sunday.

Tuesday Joe made dinner, baked chicken breast. I got free range chicken breast at Safeway on sale. Au gratin potatoes and green beans.

Tonight, I am planning crock pot beef stroganoff.
I'm contemplating making the egg noodles but my carple tunnel is saying no. I will steam broccoli, cauliflower and carrots for the side, top it with chedder. Just cause I don't care for the taste of cauliflower.

I got a wonderful package from my mother in the mail today, 3 cute little boxes of organic herbs, mint, oregano and rosemary. They smell wonderful.

I seem to be collecting all kinds of bottles and jars, anything I happen to think might be useful for something in the long run I set aside. Wish I could find money to do that with. It seems as if trying to save money by doing things my self is costing more, but at least it is safer and healthier for us.

I called one of the local places about getting grass fed beef. OMG it is so expensive. 85 pounds is $485. That is just way out of budget. I'm going to have to do some shopping around or maybe see if a few people would like to split on it.  This was at http://www.mckranch.com/.  I think if I were to organize a buying group of a few people and buy in bulk on some of the stuff it might be better and easy for us to get started.
So many thing can be bought cheaper online in bulk straight from the vendor than through stores if your buying in bulk.

Oh and I'm going to be running out of my favorite body wash soon, so I will be trying to make my own. I'm very excited about that. I would like to follow it with lotion if works out good.

Week 1 on eating more organic foods

Well today is Sunday 10/20/13 and yesterday was my first official organic shopping trip. I feel I was successful. I quickly found out after pricing things this will have to be a gradual change over. Eating healthy is very expensive!

During my week this last week I managed to go by and check out a couple of the local natural food markets. I purchased 2 pounds of grass feed ground beef and 2 pounds of chicken tenders. I also bought Organic spaghetti sauce on sale at 2 for $5. My family all liked the taste of everything I made with those few items.
So I was stoked to go shopping thinking its going to be easy and fun. I spent 2 hours going from store to store getting more frustrated by the moment that the price of grass fed beef. $4.99 a pound at Safeway was the best price I could find, but I couldn't get the butcher to wait on me. I ended up leaving the store with nothing but some salad mix, spaghetti sauce and package of chicken breast. Mostly likely I won't go back in there.

 I managed to buy free range chicken breast and whole chickens at a really good price. I found several items we use on regular basis on sale. I bought a 5lb bag of organic unbleached whole wheat white flour for $4.39 . I thought it was bit pricey, but I have already made 6 tortillas, 1 loaf of bread and 4 hamburger buns with it and have plenty left for more bread. So i think it will be a great trade off. I tried to buy our fruits and veggies while there.

I'm very please with the purchases I made and see now it will be gradual change and not over night. I ended up having to head over to trusty ole Winco to do the bulk of my shopping. Free range beef is just to expensive unless I can find an actual meat market that sells it in quantity.

I have a friend that is giving me a freezer with a little luck I'll have it packed up full of fresh veggies and find beef somewhere I can afford to get. All and all I say this week was definitely a win on my part!

Our first steps in moving forward.



The first post in this blog. I will warn you I am not a writer and there will be errors both in spelling and grammar I am sure.

My name is Becky and I live with my husband Joe and my almost 18 year old son, Arik. Joe has been ill for sometime and getting worse over the last 7 months. The doctors he has seen do not seem to know what is wrong with him and have no answers to help him. In an effort to help get better and the whole family to be healthier we are going to move to organic way of eating. I have started to collect many recipes, add many blogs to my reading list and print out as much information as I can. I spend a lot of time on face book looking for information and possible herbal medicine that might help also.

My first shopping trip will be next week to the natural markets in Salem for our groceries. This will be both exciting and difficult for me. Trying to maintain my budget for food and shop for better quality and organic food. But I have come to the conclusion if you can pronounce the ingredients in something do you really want it in your body. Buying food and starting organic food will the first steps in our lifestyle.

I gave up drinking 1 or 2 diet cokes a day 2 weeks ago. It amazes me how much better I am feeling. I was having daily headaches and now they are gone. After reading what all aspartame can do to your body I decided it was time to stop and see if it would help with the headaches. I will admit it took several days for all the crap to get out of my system, but I haven't had a headache in about 7 days now. First time in months I have gone that many days without pain.

The second step will be gathering ingredients to make our household cleaners, soaps and lotions. I am super excited about this. I think it will be fun to try this. If works great and if not I'll buy them from the natural store.

Next will Herbal Medicines.  I plan to use as many natural herbs as possible to medicate with natural ingredients. If you haven't noticed when you to the pharmacy you pay for a drug and then you counselled by the pharmacists. Once you pay for its yours. No returns on medication. Ok now that pharmacists is going to tell you how to take the medication and warn you of few things that could happen. You also get a written paper with you medication warning you that the medicine that is supposed to help you, could possibly kill you or cause a number of other things. This is the reason I want to go natural medicine.  Being in the medical field I know this all sounds weird coming from a medical professional, but I have lost faith in medicine over the last year and doctors, so Joe and I have decided on a more natural way of living.


Long range plans include homesteading and raising our own chickens, beef, pork and other critters. Going back in time so to speak while moving forward in our lives together.
